Meet the Baker!
Lucas founded Bite Me Biscuits with some clear intentions, plenty of dreams, some directions but with no real idea what he was doing. Skip forward a few months, and everything that he thought he was setting up for was out the door and a new, better and bigger idea was cooked up!
“It’s just your nostalgic sugar cookie.”
That was the comment a close friend made one day and was the catalyst that totally changed the direction of everything. Initially set out to be elegant, classy and formal, the brand took a swift turn after that, and the new fun and playful image was created. Balancing flavour, keeping it simple and not pretending the biscuits to be something they weren’t was key - simple is best. Fast forward to another conversation and then things took a turn again!
“Imagine printing onto the biscuits, rather than just having patterns.”
Was that possible? Spoiler - yes. What makes this possible? Lots of technical stuff. How is this different to the cakes you buy from the supermarket? Great question! Here at Bite Me Biscuits, we don’t use rice paper to print on. Why not? Another great question! It is cheap, accessible, and your standard printer at home (with food safe ink) can print onto this. But it will go stale, sticks to the roof of your mouth and can leave you looking like you’ve eaten a rainbow.
We use a direct print-to-food laser printer that uses food safe ink. It’s faster, cleaner and safer. Our printer is the only printer in the world that is GMP and NSF® Certified. With the printer imported from distant lands, we believe we are the only company in New Zealand that uses this technology. By being able to print 600dpi, almost picture-perfect images and the full colour spectrum, there truly is no limit to what we can put on biscuit - if you can dream it, we can print it!
So, why Biscuits?
Who doesn’t love a biscuit? Admittedly, there was an outside influence on this decision too. Another close friend (gosh, he’s social!) makes these exact biscuits too and was (and still is) a huge inspiration - her cooking skills are truly unmatched. Together, they’ve been making sweet treats, catering parties, baking goodies and icing cakes for a few years now, and Lucas has finally decided to go global - at least in New Zealand.
Who is Lucas outside of the kitchen?
Having grown up on the Coromandel Peninsula, he spent his time between the beach and boarding school in the Waikato. Now firmly settled in Wellington, he is the eldest of three, and a passionate family man with siblings and parents spread across New Zealand and Australia. Lucas has been catering birthdays, house warmings, and all other manner of exciting life events for family and friends for several years but decided to finally go official with it and focus on the sweet treats. He’s known to throw a pretty awesome party - whether that’s hosting 20 friends with food and wine in his inner-city apartment or a 200-person gala dinner for multinational organisations in a private aircraft hangar (yes, really!) he really does know what he’s doing.
In his spare time, he is also an Independant Celebrant balancing the worlds of both weddings and funerals. He also has a huge passion for travel, so when he’s not in the kitchen, hosting friends, playing the piano or marrying someone you’ll find him flying around the country, or further abroad exploring all the exciting things with wonderful world has to offer.
